I played the originals when they first launched and hardly remember anything, so I'm looking forward to this. Anyone else planning to play?

The first one was "enhanced" so long ago that it probably could stand to be re-enhanced, but that's not likely to happen:

NOTE: If the first one goes on sale during the summer sale next week, you will be able to get the bundle of both games for cheaper than if you got them separately on sale even if you already own the first one.

Yeah, but you can short rest before every fight and long rest when those run out. So, every 3 fights. That's IF you are picking up every random bit of food you find. (Sure, that fish has been sitting on the beach for a few days, so what? Dip it in some alcohol , cook it over a fire, and it'll be fine. Make sure Shadowheart has cure disease memorized, just in case.)

NWN2 was great. Unlike most folks, I really liked the main campaign. Mask of the Betrayer was fun, too, though the spells got a little overwhelming.

I would make sure that enhanced edition really is improving everything. There are BOUND to be people going on about how it isn't the "true" NWN2, but it shouldn't be all that many people.

I played a little bit of Neverwinter Nights, but I wasn't very impressed. I remember it being quite janky and you could long rest basically whenever you wanted.
I remember it had a lot of cool spells, but also way to janky. I tried it some years later again and it worked a bit better, but was still not sold. Maybe this edition will be what makes me play more. I loved the first game, so there is hope I guess.
In BG3 it costs camp supplies. They're fairly plentiful, but I don't think you can just long rest before every fight without running out.
There are a lot of ways to get hands on camp supplies, so if you wanted, you could long rest before every fight and still have an insane amount left. I'm putting a spoiler tag on this one, but I don't really think it is needed because nobody sane would spend hours upon hours doing this strategy (*cough* I did). Strategy in early Act 1:

The bear, Ormn, located at the small beach southeast in Emerald Grove, will keep on fishing and when he throws the fish on the beach you can pick them up for yourself. (4 camp supply for each fish It's kind of a kakapo move, but you could spend hours upon hours stealing his fish and obtain all the camp supplies you'll ever need.
